oreo balls recipe

i will be making these asap. my lovely cousin made them for thanksgiving. i will be putting up pictures of the process as soon as i make them myself :)

ingredients
1 pack Oreos
8oz whipped cream cheese (at room temperature)
3 boxes Baker's white chocolate

directions
1) Food process oreos into fine powder
2) Mix with cream cheese. Roll into balls.
3) Place onto wax paper on a cookie sheet. Refrigerate for 30 min (to set).
4) Melt chocolate. (Follow directions on the Baker's box.)
5) Cover balls with chocolate.
6) Let chocolate set.

project #2: lunch tote


i made this lunch tote in about two hours from ikea fabric. i got the pattern from the most recent stitch by quilting arts magazine (which is fantastic! it was only like 6 bucks and it has over 10 patterns and over 40 projects!). for an idea of what this mag is like go to their website. it takes only a yard of fabric (1/2 of main, 1/2 of contour). it's basically a rectangle sewn into the shape of a tube with a circle attached at the bottom to make a cylinder (without a top). you make two of these so that you have a lining and an outer shell. you sew the two cylinders together, and if you do it right, you can have it reversible. in the original pattern there is a pocket, i decided not to add it to this one. here are a couple of pictures. it was really pretty simple, but there were a couple of techniques that might be more complex to those who have never tried the techniques before (e.g. sewing the circle to the cylinder, drawstring, etc.) i promise to take more process pictures during the next project :)

chocolate chip tiramisu cheesecake by rr
i just found online my favorite dessert recipe of all time. thank you, rachel ray. this was my first ever cheesecake from scratch and it turned out perfectly so don't let it scare you. sooooo good. i just have to share it...and make sure i always have somewhere i can find it online :)

Chocolate Chip Tiramisu Cheesecake

INGREDIENTS:

  • One 7-ounce package crisp Italian-style ladyfingers, coarsely chopped
  • 6 tablespoons unsalted butter, melted
  • 1 tablespoon instant espresso powder
  • 1 1/2 pounds cream cheese, at room temperature
  • 1 cup sugar
  • 1 cup marscapone cheese, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 3 large eggs, at room temperature
  • 1 1/4 cups mini semisweet chocolate chips
  • Boiling water

DIRECTIONS:

  1. Position a rack in the lower third of the oven and preheat to 350°. Wrap the outside of a 9-inch springform pan with foil and line the bottom with parchment paper.

  2. Using a food processor, grind the ladyfingers into fine crumbs. Add the butter and espresso and pulse until incorporated. Transfer the mixture to the prepared pan and press to form a crust halfway up the side of the pan. Bake until set, 8 to 10 minutes; let cool. Lower the oven temperature to 325°. 

  3. Meanwhile, using an electric mixer, beat the cream cheese on high speed until fluffy, about 2 minutes. Gradually beat in the sugar at high speed until smooth. Beat in the mascarpone, vanilla and salt. Add the eggs 1 at a time, beating well after each addition. Stir in 1/2 cup chocolate chips.

  4. Set the springform pan in a roasting pan. Pour the mascarpone-chocolate chip mixture into the baked crust, then place the roasting pan in the oven. Pour enough boiling water into the roasting pan to reach halfway up the sides of the springform pan. Bake until the top is golden and the center is set but still jiggly, about 1 hour. Let cool in the water bath for 15 minutes, then transfer to a rack to cool completely. Refrigerate for 6 hours or up to 2 days. Remove the cheesecake from the springform pan. In a small, heatproof bowl, melt the remaining 1/4 cup chocolate chips in the microwave at low power, stirring until smooth. Transfer the chocolate to a resealable plastic bag. Snip a hole in the corner of the bag and drizzle the chocolate over the cake.

project #1: sesame ginger chicken stir fry


this is really easy. i just consider it creative because i made the recipe up myself with things i already had in my fridge. and i think it may be healthy. 

sesame ginger chicken stir fry
servings 4 (i guess...depends on sides)
cook/prep time: 20-30 minutes

ingredients:
1 lb. chicken tenderloin strips (your preference)
2ish c of frozen stir fry (I just emptied my bag out)
1 tbsp olive oil
1/2 c (or more) of Newman's Own Sesame Ginger dressing


directions:
1) Set stovetop to medium-high heat. Put olive oil in medium skillet.
2) Put the frozen stir fry veggies into the oil. Make sure to stir often so they don't stick to the pan. Add more oil if necessary.
3) While the veggies begin to cook, cut the chicken into 1 inch cubish things. It's really your preference. The cubes just cook faster.
4) Add the chicken.
5) Take stovetop heat down to medium. Add the dressing. (You don't have to limit yourself to a 1/2 cup. I just poured until it looked good.)
6) Cover and cook until the chicken is done. Stir often.
7) I like to serve it with brown rice (the 5 minute kind. If it's not the 5 minute kind the stir fry will be done before the rice.)
